- Located in the heart of the city inside the Novotel Canberra, One Restaurant is a new dining experience, boasting the best of contemporary Australian cuisine. The venue has emerged as a popular meeting place for dinner and drinks, away from the bustle of the city's main street.
Completely re-designed in 2009, One Restaurant has been created to provide a modern venue for friends, couples, families or events. A cleverly segmented floor plan allows One to wind down by the fire with a local wine, kick-start a night out with cocktails or sample modern Australian fare with a European twist - all while watching the world go by.
One Restaurant is open to guests and visitors seven days for breakfast, lunch, dinner and drinks. Overlooking Northbourne Ave and Canberra's nightlife precinct, a decor of rich woods and natural earthy tones creates an ambience that's fresh, warm and inviting.
Head Chef, Beau Ridgers leads the team at One Restaurant, with a career that has seen him achieve culinary successes at The Menzies Sydney, Kimberley's El Questro Wilderness Park, Western Australia - amongst other renowned dining establishments. Having also worked alongside trail blazing chef’s such as Cheong Liew, Beau’s flair for fusion cooking is sure to influence the menu. Beau is rolling up his sleeves, ready to steer the One Restaurant & Bar ship to culinary stardom in the capital.
